Thanksgiving is a wonderful time of year, filled with family and friends, good food and very limited oven space. In my family we love sides - more starches! More veggies! More carbs! We want it all. Even with a double oven that can make finding space for cooking the sides and the turkey a bit of a logistical nightmare.
As a housewarming gift we were given a Napoleon BBQ that has a rotisserie feature, and I thought it would be a great way to cook the bird and keep the oven free for everything else. I have to say that I was incredibly happy with how it turned out, it was easy to do, moist and soooo delicious.
5 - 7 pound turkey breast - bone in (serves 6-8 people)
Cooking turkey seems to be a time honoured family tradition so... how do you cook your turkey?
I find lunches really hard as I'm not a huge fan of salads or sandwiches, so I'm always looking for new ways to make lunch healthy... but still entertaining and enjoyable to eat. This week, I made a non-leafy salad base and vowed to add three different things to it each day to make it different and yummy.
I have to say it was actually a huge success! I was excited to try new flavours and it challenged me to use our leftovers in new ways. Each salad included one to two cups of the salad base and then different ingredients to jazz it up.
Day One (Top Right)
For this salad I added strawberries, pork tenderloin and red onion, the dressing I used was a store bought roasted garlic balsamic. This one had great flavours, but I wish I had added another veggie.
Day Two (Bottom Left)
This one is our "Bang Bang" chicken salad. I often make homemade chicken nuggets and toss them in sweet chili thai sauce as an appetizer. This week we had some leftover so I warmed them up and added mandarine oranges and sesame seeds. I used my own white wine vinaigrette as the dressing for this (see below). This was my favourite variation - soooo good.
Day Three (Bottom Right)
I tend to always have homemade turkey or beef meatballs in the freezer from batch cooking, and for this salad I heated up some turkey meatballs in Guinness BBQ sauce and added carrots and craisins to the salad, again using my own dressing (below). For my husband he says it's a tie between this one and the day two salad but they were both great!

Do you have a recipe from your childhood that just reminds you of a simpler time? That you could still identify from the first mouthwatering aroma coming from the oven? For me that was always my Mom's blueberry muffins.
In my family we've always believed that the muffin batter is simply a vessel to barely hold countless blueberries in check. And I'm not ashamed to say that half the fun of these muffins was trying to pick the one with the most blueberries!

Last week my cousin came over for a visit and I wanted to have something yummy to eat but had a pretty awful night (first tooth!) so I needed something quick and easy, so I made these guys which were like two bite brownies.
To celebrate Canada Day I asked my twitter followers what truly Canadian dish they'd like to see and "Maple Anything" was the winner. When I told my hubby about this he suggested Maple Bacon Cheesecake, and since I like maple, bacon and cheesecake I thought it was a great idea.
This is actually pretty easy to make, just takes a little time because you have to bake the bacon at a really high temperature so you can't do the cheesecake at the same time.
Top your maple cheesecake with the maple bacon and enjoy!

This week my husband and I celebrated four years of marriage and seven years of being together. It was so nice to take a quiet moment and think about our time together.
What better way to reflect than with a bottle of our favourite champagne and Skor Cheesecake. You may not know, but "Skor Cheesecake" were the first words I exchanged with my husband, so the dessert holds a special place in our hearts.
I normally make a baked cheesecake that you can also read about here, but since it was summer I wanted to do something that was a little cooler and felt almost like ice cream. This is super easy and if you're making it for a group you can double the recipe and make it ahead of time.
* I used two 5 inch dishes for ours, but you could easily double the recipe and use a spring form pan*
To remove from a non-springform pan: warm a butter knife under hot water and slowly work your way around the edges. Then put a plate on the top and flip it over, give the bottom of your dish a good pat so that the cake falls out, then remove the dish and place another plate on the bottom on your cake. Flip right side over and voila!

I posted a photo to Instagram the other week asking what people wanted to see, my muffin recipe or the "How To" for my Spring Beet Salad. Most folks said the muffins (and hey, they're dark chocolate chip banana muffins so I can't really blame them....), but I did have one person who wanted to learn about this salad - so Steph this is for you!
I have to be honest, I generally hate salad. Lettuce bores me. Spinach and kale don't really float my boat either. So for me to truly dig into a salad, it has to have enough "other stuff" for me to forget I'm having a salad.
One of my favourite things to add to boring old salad, are beets. They need to be roasted, and since I tend to have the oven on a least once a week roasting food to make Finn purees it's super easy for me to toss in some beets and roast them as well. I just remove the ends, cut in half, toss in olive oil and roast until fork tender (it really depends on the size but generally 45-60 minutes at 425). I roast the beets in tinfoil, and when they're done I just let them sit for a bit and steam, which means the skins basically fall off.
For extra flavour once the skins are off I toss the beets in balsamic vinegar (about a tbsp) and let them kinda marinate in the vinegar as they cool down. I feel that when you add the balsamic directly to the hot beets they soak up more of the flavour.
This salad is a little different every time I make it, I really use it as a fridge clean out, to use more produce and enjoy some seasonal foods. This is how I made the salad this time around, but please free style and leave your adaptations in the comments below!!

I'm writing this post at 3:36 am because I'm up so why not take advantage of the time. We have been struggling hardcore with sleep, as in not getting any. Do yesterday I was feeling human and wanted to do something that I enjoyed, which for me often tends to be baking.
I opted to whip up these chewy oatmeal cookies for a mommy play date I was going on. I wanted something spicy, sweet and tart. Plus I had all the ingredients - a rare find for me.
These cookies are AMAZING. They stay soft and chewy and aren't too sweet. They are both mom and hubby approved.
Please Note: these cookies are addictive- you may want to hide them or give some away.
**How to Rehydrate Crasins** Before you start your mixing boil a kettle. Make yourself some tea, with the leftover hot water cover the crasins. Just before you add them to the cookies drain them and give a quick rinse with cool water.
Tips For Extra Chewy Cookies
I have been making these blondies since 2007. My mom and I went on a trip to New York and I was obsessed with Sex & the City. We took the Sex & the City tour of New York which included a stop to Magnolia Bakery and I fell in love.
Since these blondies have been on my menu for years, always with a few variations, I depend on the same core recipe. The original recipe comes from the Magnolia cookbook. I'm a little more free with the recipe than they are. You can mix up the add ins for a different bar (white chocolate cranberry blondies anyone?).
I made them for Valentines Day and gave half of them away so that we would eat them. For those of you following Weight Watchers these are 11 sp (which is why I gave half away and because they're too good to keep all to yourself ).
•1 1/2 sticks unsalted butter, softened
•1 cup brown sugar
•1/2 cup white sugar
•Vanilla extract (2 tsp or 2 dashes)
•1 1/2 cup flour
•1 tsp baking powder
•1/4 tsp salt
•4 oz dark chocolate chunks
•2 oz white chocolate chunks n
I had this dream of sitting down to a hot coffee every morning while my little guy napped peacefully in his crib. I'd enjoy my breakfast and prep for the day ahead.
That's not a dream it's currently a illusion and as anyone with a ten week old will tell you if you can't eat it with one hand you're not going to eat.
So, I wanted something that I could make ahead, control my sugar & fibre intake, and actually enjoy and feel full for an extended period of time. That's when I thought of baked oatmeal. I have always enjoyed oatmeal and tried to find healthy alternatives to the things that come in packages. I looked at several recipes online and crafted up these bad boys. I really enjoy the oatmeal and hope to post variations soon.
Baked Apple Cinnamon Oatmeal
(6 Smart Points for Weight Watchers)
* 2 cups oats
* 1 cup all bran buds (softened with about 1/4 or 1/3 cup boiling water)
* 2 cups skim milk
* 1 egg
* 1/3 cup brown sugar divided (or Splenda)
* Vanilla extract (a dash to a splash)
* 2 tsp cinnamon
* 1tsp pumpkin pie spice
* 1/2 cup unsweetened apple sauce
* One Apple diced (leave the skin on for fibre)
* Preheat oven to 375.
* In a small bowl mix half the brown sugar with half the cinnamon and set aside.
* In another bowl mix everything else together (yeah - it really is that easy).
* Spoon mixture evenly in a pan. Note: I use this Pampered Chef stoneware bar pan for mine. Because of this I don't need to use oil to grease my pan - if you're using something other than stoneware I'd give it a little spray down.
* Sprinkle brown sugar mixture over the top.
* Bake for 25 minutes (or a little more or less depending on your oven and what kind of dish you use). Oatmeal should appear solid and dry.
