I'm writing this post at 3:36 am because I'm up so why not take advantage of the time. We have been struggling hardcore with sleep, as in not getting any. Do yesterday I was feeling human and wanted to do something that I enjoyed, which for me often tends to be baking.
I opted to whip up these chewy oatmeal cookies for a mommy play date I was going on. I wanted something spicy, sweet and tart. Plus I had all the ingredients - a rare find for me.
These cookies are AMAZING. They stay soft and chewy and aren't too sweet. They are both mom and hubby approved.

**How to Rehydrate Crasins** Before you start your mixing boil a kettle. Make yourself some tea, with the leftover hot water cover the crasins. Just before you add them to the cookies drain them and give a quick rinse with cool water.
Tips For Extra Chewy Cookies
I love baking for the holidays, and I find that baking helps to calm me and let's me regroup when I'm in my new Mommy sleep deprived state. Normally I participate in a cookie Christmas exchange but since I'm not at work I haven't done that this year so I'm starting to bake cookies now.
To start I tried a Robin Hood recipe, Chocolate Mint Sparklers. I picked this as chocolate mint because is Jordan's favourite flavour. We even had a layer of our wedding cake in the flavour so it seemed like the perfect cookie to start the season. I only had to made a few adjustments, overall the recipe was super easy and yummy.
These are also family approved!
**I froze over half of these in wax paper and tin foil so we have some for Christmas Eve **
