With a chill in the air, I have been attempting to find recipes that warm you up from the inside out. In addition, for years I have battled a sensitivity to tomatoes, but now seem to be able to eat them (something about your body chaining every 7 years...), so I am looking forward to trying new recipes.
I used to make this chili with just beer, but was happy to try it out with crushed tomatoes this time. My husband said it was the best chili I ever made, so I take that as a win and thought I would share it with you. I also like that there are hidden veggies in this recipe - so I feel like I can enjoy more!
What are some of your favorite tomato based recipes?
My friends Katie & Justin are expecting their second child. With their first child I make a cake for them and each of their moms. They were having a boy ( though hard to tell as the dye went a little more green than blue). When I found out they were expecting again I wanted to do the same thing.
At their anatomy scan a kind technician wrote the baby's gender on a post it and sealed it in an envelope. Justin dropped it off at my house and the next day they came to pick up their cupcakes.
I will be honest, I had a crazy week when I made these so I cheated and used mixes for the cake and icing (and love too) so that they could have them on a weeknight.
I used a box of cake mix, food colouring, royal icing, pink and blue sprinkles and little baby safety pin decorations.
To make just follow the cake directions and then put about a quarter of the batter aside to dye the appropriate colour. I use Wilton gel food colouring - start small and keep mixing until you get your desired colour (or get green batter as explained above).
To bake I just followed the package directions. The tricky part is mixing the two batters so you can't tell what colour the surprise is. I filled the cupcake liners up about a quarter of the way with white batter and then carefully added a dollop of the coloured batter. I then sealed the colour in by adding a ring of white cake mix and covering the top. Don't fill the cupcakes too much or the surprise will leak out as they bake.
Let the cupcakes cool completely and then ice and decorate as you wish. What have you done for a gender reveal? Have your friends done anything creative?
