Soy Ginger Chicken

So, first I have to say a boneless,skinless chicken breast doesn't always take an amazing photo.But what this chicken lacks in beauty it makes up for in taste.

We have chicken a lot and it can be hard to find different ways of dressing it up. I made this after work one night and loved that it came together quickly and with little effort.

What's your favourite way to cook chicken?

Ingredients

  • 2 chicken breast
  • 1/4 cup soy
  • 1/4 olive oil
  • 1 tbsp honey
  • 2 garlic cloves minced
  • 1 tsp minced ginger

Instructions

  • In a ziplock bag combine all ingredients
  • Add chicken
  • Marinade for an hour or more (longer = more intense flavour)
  • Bake at 375 for 20-25 minutes until cooked through

Cottage Breakfast

This past weekend my husband and I joined our friends on a cottage weekend. While the weather was not so great we had an amazing time meeting new friends and playing Heads Up (this one is for the guys....).

To make sure everyone got a chance to relax we all took on a meal and Jordan and I got Sunday breakfast. My mom suggested a recipe from: A Collection of Delicious Recipes from Harbour House Hotel.

The cook book has a ton of great (and easy) recipes that can feed groups - perfect for the cottage! This said it would feed 10-14 and served 9 comfortably.

Another added bonus - you make it the night ahead! In the morning it is ready then less than an hour. It also brings people together. Robbie and I had only know each other for a day but in the kitchen it was like we worked together for years!

I adapted this recipe,largely because I left the recipe at home, but when you add more sugar and Skor to French toast,there is no wrong way!

  • 16 slices white bread (enough for two layers of the pan you're using)
  • 3 apples cut in small pieces
  • 8 oz of cream cheese
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 2 3/4 cup milk
  • 2 tsp cinnamon
  • 2 tsp vanilla (I tend to use more - about double but I love vanilla)
  • Skor bits (be generous,I used the bag)
  • 10 Eggs


Instructions 
  • Grease a large baking pan (9x13)
  • Cube bread,crust and all,and lightly toast. Later half the bread cubes in the baking dish, and cover with half the apples and half the Skor bits
  • Mix cream cheese,sugars,cinnamon, a tsp of vanilla and 3/4 cup milk together and cover bread mixture
  • Add the remaining bread cubes and top with apple slices and Skor bits
  • Beat 10 eggs with 2 cups milk, cinnamon, and vanilla and pour over bread
  • Give the top a little push with your spoon to help the bread soak up the egg mixture
  • Cover and refrigerate overnight
  • Bake at 350 for 40-45 minutes and enjoy!
