So I had every intention of posting this yesterday, but it was yard day and we got super caught up getting our yard ready, and then since my life has changed, it was 8pm and I was ready for bed.
I asked you on Instagram this week to vote for what recipe I'd post this week and it went in favour of the muffins! Sorry beet salad - better luck next time!
I make these at least once a month for my hubby and if I do say so they are delicious!

1/2 cup melted butter or margarine
3 bananas smooshed (I normally mash 2 really well and leave the third a little lumpy)
1/4 cup milk
1 tbsp vanilla
1/3 cup brown sugar
1 1/2 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
Pinch of salt
1/2 - 1 cup dark chocolate chips (depending on how healthy you want to be or if your like me how many chips go missing while you make the muffins....)
Preheat oven to 350
Mix first six ingredients. Stir well.
Add the last ingredients.
Tip: add the chocolate chips at the same time as the flour. When they're coated in flour they don't all sink to the bottom.
Pour better into lined muffin tins (save the calories and line your tins vs spraying with oil)
Bake for 15-17 minutes or until toothpick comes out clean!
We eat a lot of frozen meals at our house, mostly because bedtime for baby and dinner time for mommy and daddy basically happen at the same time and frozen meals SAVE me. That being said I don't like the idea of eating a lot of prepared foods, so I like to make our frozen meals from scratch and wanted to share one of favourite recipes. This one does have some prepared food elements, but it's so good I had to share it.
Creamy Chicken Bake (8 x 2 person servings)
To enjoy during the week cook from frozen at 400 for about one hour or until chicken is cooked and topping is a yummy golden colour. We typically serve this with rice and another veggie.
